Gluten-free chickpea crackers

Make these crispy, homemade chickpea crackers in just 30 minutes! Naturally vegan, gluten-free, and high in protein, they require only five ingredients: gram flour, olive oil, thyme, salt, nutritional yeast and water. They make a perfect, healthy snack to enjoy on their own or with your favourite dips.




Prep Time: 10 mins | Cook Time: 20 mins | Yield: 30 crackers

Ingredients

  • Fine gram flour (chickpea flour): 180g

  • Dried thyme: 2 tsp

  • Kosher sea salt: 1 tsp

  • Nutritional yeast: 2 tsp

  • Extra virgin olive oil: 65ml

  • Water: 65ml


Method

  1. Heat the oven: Preheat your oven to 150°C / 130°C Fan (Gas Mark 2) and leave a large baking tray inside to heat up.

  2. Mix the dry ingredients: In a mixing bowl, combine the gram flour, sea salt, nutritional yeast and thyme. Pour in the olive oil and rub it in with your fingertips until the mixture looks like breadcrumbs.

  3. Make the dough: Gradually add the water a little at a time while mixing. Knead until you have a smooth, firm ball of dough.

  4. Roll it out: Place the dough between two sheets of baking paper and roll it out until it is about 2mm thin. (Rolling it thinly is the secret to a great crunch!)

  5. Shape and prep: Cut the dough into your desired shapes using a knife or pizza cutter. Prick the surface gently with a fork to stop the crackers from puffing up in the oven.

  6. Bake: Carefully slide the dough onto your hot baking tray. Bake for 18–20 minutes, turning the tray halfway through. They are ready when golden at the edges and firm to the touch.

  7. Cool and store: Let them cool completely on a wire rack. Store them in a glass jar or wrapped tightly in foil for up to 5 days to keep them beautifully crisp.
